Smoked Meat Croquettes
When you’re doing two hundred covers per night, it’s imperative to have a winner in your arsenal, one that is all prep and little cook time during service. At home, well, this is the least healthy but the most rewarding of all “night-after” cures.
For our American readers, Montreal smoked meat is dry-cured beef brisket. It resembles pastrami the way that a Montreal bagel “resembles” a New York bagel.
You will need:
- Food processor
- Digital scale (optional)
- Deep fryer or heavy pot
- Deep-frying thermometer

Potato & Asparagus Salad with Basil & Arugula Pesto
I know there are potatoes in this salad, but trust me, this is not a potato salad. This is a salad with potatoes for all those people who think outside the potato salad box, seeing possibilities with potatoes and other vegetables and absolutely no mayo. This salad needs to cool before being eaten, so if you want it for dinner tonight, get those potatoes cooking right now.
Lemon Cheesecake Squares
Give me all of the lemon, all of the time. Sometimes after a heavy meal you are looking for something lighter, and lemon desserts can fool us into believing that they are indeed lighter in some way. They usually aren’t, but there is just something about lemon and cheesecake together that makes you feel like you are indeed having a sweet light bite.
Grandma Ellen’s Cold Picnic Barbecue Fried Chicken
My mind was completely blown when my friend Kandice casually mentioned that her Grandma Ellen used the same potato-chip fried chicken recipe that I did, but used barbecue chips instead of plain chips and served it cold as can be. It was a favorite family picnic fare, and since it was served cold, you could have fried chicken from the cooler any time you wanted. She admitted that she had never eaten this chicken warm, and funnily enough, I always made my fried chicken and served it hot for dinner, so I can tell you that it’s an amazing hot meal as well. Having said that, if there is one thing in this world I love to eat for breakfast, it’s cold fried chicken.
Seriously. Coffee and cold fried chicken: the breakfast of champions.
The Nanaimo Bar
What is the quickest way to spot a tourist in Butter? Look for the quizzical expression on their face as they wonder aloud what a naa-ni-moo bar is.
Understandably so, given that this bar was created in Nanaimo, British Columbia, sometime in the 1950s. Making it a sort of secret Canadian-baked-goods handshake.
