I know there are potatoes in this salad, but trust me, this is not a potato salad. This is a salad with potatoes for all those people who think outside the potato salad box, seeing possibilities with potatoes and other vegetables and absolutely no mayo. Give me all of the lemon, all of the time. Sometimes after a heavy meal you are looking for something lighter, and lemon desserts can fool us into believing that they are indeed lighter in some way.
