Introduction

Unlike almost 80 percent of the recipes in this book, this ice cream pie is one I created specifically for summer. My fourth favourite season of the year, the months between June and September tend to drag on a little too long for me, and by the time we reach August I find myself as emotionally wilted as the ferns on my front porch. To boost my spirits, I usually turn to food for comfort, and this is what I crave when the days are endlessly hot and humid. It’s simple to make, takes very little time in the oven, and impresses almost all who encounter it. I like to use two flavours of ice cream in this pie, but you can use a single flavour if you prefer. Be sure to serve this pie with a spoonful of whipped cream and a generous drizzle of chocolate sauce if you have them around. Oh, and for those who truly love summer, this dessert is perfect for warm-weather birthdays, backyard barbecues, and anytime you feel like celebrating the season.
