My good friend Patrick makes a mean chili, so when he kindly offered to share his recipe, I jumped at the chance to include it in the cookbook. My family loves it, and it reminds me of the chili my dad used to make on weekends when I was growing up. The only thing I added—but I’m sure Pat would approve—is the carrots, just to beef up the vegetables.

This is a great recipe for when you have a big crowd to feed or if you want to make a large batch to enjoy leftovers. Chili freezes really well, making it ideal for easy weeknight dinners. If you don’t have a slow cooker you can simply make the chili in a large soup pot; the slow cooking is really just to allow the flavours to mingle. And if you let it sit overnight, it tastes even better the next day. If you’re making this for young ones, you might want to leave out the jalapeño and cayenne pepper so it’s not too spicy! Enjoy with my Spicy Cornbread Muffins (page 129), with or without the jalapeño.

In the winter, it’s not often that you enjoy fresh and bright-tasting cocktails. This one has all the summery lightness that orange and lemon and citrus bring, with more traditional winter flavours of pomegranate juice and sweet apple cider. This cocktail can also be served as a warm punch on an extra-chilly day. To make the warm version, pour the ingredients listed in step 1 (except the gin) into a pot and bring to a simmer. Add 1 ounce of the gin to each glass and top with the warm juice mixture. Leave out the sparkling wine and garnish with an orange slice instead of the pomegranate arils.
