This is the dish Patrick Dempsey’s character tells Renée Zellweger’s Bridget Jones that he would have brought her on their imaginary second date in Bridget Jones’s Baby. “From Ottolenghi,” says Dempsey, “delicious and healthy!” And easy, we might add! What sounded like a bit of product placement on our part was in fact no such thing. The recipe didn’t even exist on our menu, so this is a retrospective acknowledgment.

Introduction

I’ve never understood exactly why brining works so well on roast turkey, but it really does make it more moist and flavourful. What I do understand, and what stays with me, is the reaction I get from guests when I serve this bird. Hands-down, it’s the best turkey they’ve ever eaten. It’s turkey magic. This roast also looks spectacular, and is always the centrepiece of my Thanksgiving table. I serve it with easy sides like Make-Ahead Scalloped Potatoes (page 227) and Balsamic Roasted Vegetables (page 219). The bones also make terrific soup.

Dry-brining is much less complicated than wet-brining since you don’t need a vessel in which to submerge a turkey and keep it cold. It is absolutely critical that you use kosher salt for this, preferably Diamond Crystal. Regular salt is too fine and will permeate the fibres of the turkey, ruining everything.

I could have easily created 60 pasta recipes in this book, but I only have a few, so I need them to be special. Go to your local grocery store and get yourself the softest, creamiest goat cheese they have because this cheesy pasta recipe deserves it. It is a great meal for a nice springtime lunch with friends or family. I love this pasta dish because the goat cheese has a big presence, and as a no-sauce pasta, it is much lighter for the spring or summer heat.

Every book has a version of carbonara, and this is mine. The chili is a nod to my favourite city, Rome, where cooks always add a little hot peperoncini (or sexy tickle as I like to think of it) to pasta dishes, but it also slows me down from inhaling large portions of this for supper. This is a comforting dish that's also nourishing in an old-fashioned way - my mom used to make me eat a plate of carbonara before I headed into a sixteen-hour restaurant shift. The bacon was important, she insisted. I never argued! 

I only use part of an egg when it's absolutely necessary, and this is one of those times. Otherwise the sauce won't cling to the pasta. Add the whites to tomorrow's omelette or scrambled eggs. Serve this with Lemony Broiled Asparagus (page 182) or Roasted Broccoli with Lemon and Parmesan (page 188).
