Fleur de sel is a delicate flaky sea salt from France’s northern coast. It’s a great finishing salt and pairs nicely with chocolate and caramel. The fleur de sel and rosemary combination makes these double chocolate cookies one of my favourite afternoon snacks.
Equipment: You will need a stand mixer fitted with a paddle attachment and two baking sheets.
Procedure: Preheat your oven to 350°F (175°C). Line the baking sheets with parchment paper.
These classically flavored fajitas have all of the attributes of the original—but this chicken-and-shrimp combo is conveniently cooked on a single sheet pan in the oven. You can walk away while everything roasts—and there’s no grease splatter to clean up on the stovetop when you’re done.
If you’ve never roasted cabbage before, this recipe will inspire you to make it part of your regular repertoire. The wedges turn tender and buttery at high heat—with crisped, lightly browned edges. Wrapping them in bacon before roasting makes them even better!
My friend Henriette is one of the most talented (and humble!) cooks that I know. We worked together at an organic vegetarian restaurant for years, and I learned so much from her, including how to think outside of the box and try new combinations of foods, even if they seemed unusual. One day she was making a cabbage salad and folded in toasted coconut. I looked over at what she was doing and raised an eyebrow… you can’t mess with coleslaw! But it worked. Ever since then, I love tossing a little coconut into my cabbage salads. It adds sweet, nutty notes, and its richness is the perfect balance for the lightness of the cabbage. My version includes quinoa for a meal-like salad, but this is optional. The smooth and creamy Minty Tahini Dressing is ridiculously yummy on much more than this salad alone, so pour it onto everything you make— especially if it seems weird!
