Crispy Brussels Sprouts with Tahini Caesar

The perfect cold weather version of the classic Caesar salad.
Introduction

Everyone and their brother knows what a Brussels sprout looks like. They’re tiny little cabbages that, if cooked by my mother in 1998, taste like an old shoe. But on their stalks, Brussels are one of the most fantastical Dr. Seuss-ian vegetables you’ll ever behold and, when cooked properly to crispy golden brown in a hot oven, their flavor is a revelation. Caesar salad purists may sneer, but the nutty and slightly bitter tahini plays off the sweetness of the crispy roasted Brussels sprouts and makes a perfect cold weather version of this classic salad.

Focaccia topped with sweet delicata squash, aromatic Taleggio, bitter arugula, and crunchy hazelnuts to create this autumn tartin!
Introduction

Airy focaccia is topped with sweet delicata squash, aromatic Taleggio, bitter arugula, and crunchy hazelnuts to create this autumn tartine. Delicata squash has pale yellow skin with green striations and a lovely scalloped shape, so it looks particularly pretty cut into rings for this tartine. And it doesn’t require peeling, so it’s practically fuss-free!

If I had to choose my favourite Dominican dish, it would be, without a doubt, Dominican pumpkin soup. It’s food for the soul.
Introduction

If I had to choose my favourite Dominican dish, it would be, without a doubt, Dominican pumpkin soup. Especially if made by my mother! In Santo Domingo, soups are made whenever it’s rainy and the temperature drops a bit. What makes this soup different from any other pumpkin or butternut squash soup is that it is spiced with cilantro and green onions—ingredients that instantly transport me back home. I always ask my mother to make this soup for me when she comes to Canada, and it’s the one I crave most when feeling a bit home sick. It’s truly food for the soul.

Fairy Godmother Minestrone

A warm, hearty vegetable soup perfect for those special moments in life.
Introduction

On the day I was born, my parents’ next-door neighbour, Gail White, was making minestrone. When my parents arrived home from the hospital, she greeted them with her warming, hearty vegetable soup. Nearly thirty years later, on the night after Ezzie was born, she brought over a pot of her minestrone with some crusty sour dough and a big hunk of Parmesan. We dimmed the lights, opened some red wine and had a picnic. The way the recipe is written, it’s more stew than soup, which is how I like it, but feel free to add more stock or go a bit lighter on the vegetables if you prefer more liquid. If you’re making it to freeze, leave out the pasta, green beans and peas and add them when you’re ready to serve.

Introduction

A bowl of French onion soup is lavish food at its finest. Luxurious yet simple, this bistro favorite involves caramelizing onions, adding broth and a splash of wine or sherry, and topping it with a cheesy piece of toasted bread. A side from a list of on-hand ingredients, our keys to a fine French onion soup include patience, time and substituting sherry for a couple of glasses of sparkling white wine—adding plenty of magic (and bubbles).
